Another Year Vegan: My Favorite Plant-based Recipes

Happy second veganniversary to me! In honor of my second year vegan, I thought I could share some of my favorite plant-based recipes! I have never been a great cook. To be honest, I’ve had a pretty dysfunctional relationship with food for most of my life. When I first met my husband I could barely make mac + cheese, and he always was the one that cooked dinner between the two of us…

In the last four years, I have gone down a pretty indescribable (and amazing!) journey to health. My devotion to wellness and my own food choices lead me to really appreciate the food that I was making (and eating!) and now I love love LOVE creating homemade dinners. I am still not the best at creating my “own” recipes but here are some of my favorites I have found over the years.

1.) Almond butter + chocolate chip cookies.

You are probably wondering why I am starting with a dessert, but when you make them you will understand why… BEST cookies EVER! I own this cook book and it was probably one of the best purchases I have ever made. Not only are these cookies vegan, but they are also gluten free, talk about a healthy cookie!

In this particular version, she uses peanut butter and small chocolate chips. Whenever I make them I use almond butter and use large chocolate chunks (the more chocolate, the better!).

2.) Sweet Potato + Black Bean Veggie Burgers

I LOVE a good veggie burger, and these are by far my favorite homemade ones. Savory, a little spicy if you want them to be, and so nutritious. Make them with a side of homemade french fries… Yum!

3.) Mediterranean Baked Sweet Potatoes

This short and sweet recipe is honestly AMAZING. Its could be served as a side dish or even as a full meal, packed with protein and nutrients and unbelievably delicious. So quick and easy to make as well! (my favorite!)

4.) Falafel Recipe

Ummmm….YUM! I love Falafel. This recipe is easy, fairly quick, and totally delicious. Make them with some homemade hummus, wrapped in a tortilla with some cucumber salad + tomatoes and you have yourself a delicious meal. These are so good they could even be eaten by itself, whatever calls to you that day!

5.) Blueberry Banana Pancakes

I LOVE pancakes. I have tried a few different pancake recipes since becoming vegan and though they all ended up OK… These ones are for SURE my favorite!

I use almond milk instead of soy milk, and once the batter has been made (I just make it all in the blender, and it turns out just fine!) I add the blueberries right before scooping the mixture to cook. So, so, SO yummy!

6.) Sweet Potato Enchiladas with Avocado Cream Sauce

These enchiladas are probably one of my FAVORITE meals. The avocado cilantro cream sauce totally makes the entire dish… A must try!

7.) Tomato Basil Cream Pasta

Yet another Oh She Glows recipe… I just LOVE her cook book! This is my go-to pasta dish, its creamy, delicious, filling, AND fast!

8.) Creamy Potato Soup

I used this recipe as a guideline to create a delicious vegan creamy potato soup. I used the base that this recipe used, but used cashew milk instead of coconut milk and also added soaked raw cashews as well. Also added a little nutritional yeast and a tad of coriander… YUM!!

9.) Vanilla Cupcakes

My best friend made these cupcakes awhile ago (love you girl!) and they were honestly the most moist, amazing, DELICIOUS cupcakes I have ever had. I had to try out the recipe myself! I made them without the sprinkles, and they were SO good. I brought them to a workshop for my students recently and they were a HUGE hit.

10.) Coconut Red Curry

I have been LOVING Indian food recently. So much so that lately I have been making my own curries from scratch (including paste), yet this is a constant trial-and-error process.  So, I thought I could share one of the recipes that I love and usually use as a guideline for when I make my own.

Well… There you have it! Another year vegan has been amazing, eye-opening, and continuously evolving. I am so thankful for Mother Earth and the abundance of gifts she offers to us on a daily basis, I feel SO blessed to walk down this path.
